Kancer Keto Roasted Cantaloupe Seeds

Ingredients:

  • Fresh cantaloupe seeds (harvested from a ripe cantaloupe)
  • Olive oil or melted butter
  • Salt (optional)

Instructions:

  1. Harvest and Clean the Seeds:
    • Cut open a ripe cantaloupe and scoop out the seeds using a spoon.
    • Rinse the seeds thoroughly under cold water to remove any remaining pulp.
  2. Drying the Seeds:
    • Spread the cleaned seeds on a paper towel or a baking sheet. Allow them to air-dry for a few hours or overnight.
    • Make sure they are completely dry before proceeding.
  3. Roasting:
    • Preheat your oven to 325°F (163°C).
    • Toss the dried cantaloupe seeds with olive oil, sea salt,  chili powder, garlic powder, or smoked paprika for added taste.
    • Spread the seeds evenly on a baking sheet lined with parchment paper.
    • Roast the seeds in the preheated oven for about 15-20 minutes, stirring occasionally. Keep an eye on them to prevent burning.
    • The seeds are ready when they turn golden brown and become crispy.
  4. Cooling and Enjoying:
    • Remove the seeds from the oven and let them cool completely.
    • Once cooled, transfer them to an airtight container.
    • Enjoy your roasted cantaloupe seeds as a crunchy and nutritious snack!

Remember that roasted cantaloupe seeds have a mild, nutty flavor. Happy snacking! 🍈
